Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Made this for the first time 1/12/08 and it was a hit! The only thing I did differently was to divide the creamy mixture into 2 plates and then double the cheese, lettuce, olives and tomatoes. Left the onion off too. This will be made time and time again!
