4 cups sugar
3 cups cocoa powder
1/2 teaspoon salt
1 quart warm water
2 quarts boiling water
4 gallons warm milk
Combine the sugar, cocoa powder, salt, and warm water in a large pan or Dutch oven over medium-high heat. Mix until the sugar and cocoa have dissolved.
Add the boiling water and let the cocoa cook at a low boil for 10 minutes.
Remove the pan from the heat and stir in the warm milk.
Ladle the cocoa into mugs and serve immediately. The cocoa can be kept warm over low heat (do not let it boil once the milk has been added it or it may curdle).
