It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

The perfect way to add a little bit of holiday cheer to your meal. The tart cranberries are balanced perfectly by the sweet orange liqueur, making it a delicious addition to any holiday table.
1 bag cranberries, picked over
1 1/2 cup sugar
1/2 cup orange juice
1 tablespoon Grand Marnier
1/2 teaspoon salt
1 tablespoon grated orange zest
1 teaspoon grated lemon zest
1 teaspoon fresh grated ginger (don't use powder)
Put all ingredients in a medium sized sauce pot. Cook on low for 30-45 minutes, or until cranberries have exploded and you have a saucy texture and consistency.
Cool to room temperature and refrigerate overnight (don't skip this step. The flavors need the time to mellow out). Serve with some grated orange zest on top.
