Grilled Cornish Game Hens

ingredients
3 Cornish game hens, split in halves
4 lemons, juiced
1/4 cup extra virgin olive oil
1/4 cup dry white wine
1 tablespoon (heaping) Dijon mustard
4 cloves garlic, minced
1/2 teaspoon fresh thyme leaves
1/4 teaspoon fresh rosemary leaves
1/4 teaspoon black pepper
1/4 teaspoon salt
directions
Rinse and pat dry the hen halves; set aside.
In a nonreactive pan large enough to contain hen halves in a single layer, combine lemon juice, olive oil, wine, Dijon mustard, garlic, thyme, rosemary, pepper and salt. Mix well.
Place hen halves in marinade, turning so that both sides are covered. Cover pan, refrigerate and marinate overnight. Turn hen halves 2 or 3 times while marinating.
Prepare grill for indirect heat cooking. Heat grill on high until quite hot. Place hens on grill grate, split side down, with no hot coals below the birds. Cover and grill about 40 minutes, turning every 15 minutes or so, until hens are nicely browned and juices run clear.
Serve hot, or cover and refrigerate hens and serve chilled.
