Gilroy Garlic Chicken

ingredients
8 cloves garlic, finely chopped
3 tablespoons lime juice
2 tablespoons Dijon mustard
2 tablespoons honey
salt and pepper to taste
4 boneless, skinless chicken breasts
2 tablespoons olive oil
directions
Mix garlic, lime juice, Dijon mustard, honey, salt and pepper in shallow dish. Add chicken and toss to coat. Marinate for 10 minutes, turning occasionally. Drain chicken, reserving marinade.
Heat olive oil in large saute pan and add chicken. Cook until brown on both sides, turning occasionally. Add reserved marinade to saute pan and reduce heat. Cook for 7 minutes longer or until chicken is cooked through.
Serve with hot cooked rice or pasta. The sauce can be thinned with white wine. Prepare in advance and store, covered in refrigerator. Reheat just before serving.
