Slow Cooker Pork And Fettuccine Casserole

ingredients

4 pounds pork tenderloin
3 large onions, sliced
6 tablespoons butter
3 tablespoons paprika
3 tablespoons caraway seed
salt and pepper, to taste
2 cups canned tomatoes, well-drained
1/2 cup red wine
1/2 cup sour cream
1 1/2 pound spinach fettuccine, cooked

directions

Thinly slice pork.

In skillet, brown pork with onions in butter. Add paprika, caraway seed, salt and pepper. Stir in tomatoes and wine. Place in crock pot. Cook on HIGH for 3 to 4 hours.

About five minutes before serving, stir in sour cream and serve over hot fettuccine.

    I cut this recipe down to serve only four people so I used one pound of pork tenderloin (I'm also not sure how one would fit 4 pounds in a crock pot unless it's a huge crock pot!). Since there would only be 1/8 cup of red wine used in the smaller serving size I just used some beef broth instead since I had a box of that open (no need to open a whole bottle of wine then). And since the pork was basically cooked first I cooked this on low for 5 hours instead of high. I suppose if you are using the full size recipe it would need more heat to heat through.

    This was GREAT! What a fabulous way to use a large pork tenderloin where you can eat the left-overs and no need to worry about heating and then having it be too done. I added about 1 T of a great seasoning mix I got from Whole Foods to this. And I cooked it for 5 hours on High and then about 1 hour on Low. Served it with broccoli. My husband RAVED about it.
