2 pounds pork tenderloin, cubed
2 cloves garlic, chopped
2 cups sliced red bell pepper
2 tablespoons white wine vinegar
1/4 cup teriyaki sauce
1 teaspoon crushed red pepper
1/4 cup creamy peanut butter
cooked rice
1/2 cup chopped green onion
1/4 cup chopped peanuts

directions

Put tenderloin, garlic, bell pepper, vinegar, teriyaki sauce and red pepper into slow cooker. Cook on Low 8 hours.

Remove meat from pot and shred. Add peanut butter to pot. Add meat. Cook for another 30 minutes. Serve over cooked rice, topped with green onions and chopped peanuts.

    I think there is a misconception that this is like american stew. It's a thai dish which is really a thicker meat mixture (think like chow mein) that is served over rice and not the kind of stew we're used to. It's a very delicious dish so I highly recommend it to anyone who likes thai food.

    Follow the recipe exactly and you will have a very tasty and spicy dish. Cut back on the red pepper if some in your family have issues with spicy foods. This is not so much a "stew" as a type of pulled pork, really. The meat was super-tender and juicy, but there was not enough liquid to qualify as a stew, in my opinion. You can always add more liquid at the start of the cooking if you want something more stew-like.

    This stew was delicious but there was almost no liquid at the end. It came out quite dry. The recipe says it will be done in 5 hours yet the directions say to cook on low for 8 hours and then an additional 30 minutes. Perhaps I cooked it too long? Anyway, the taste was amazing and we thought it would be delicious in tacos or a wrap. I will definitely make it again. The meat came out unbelievably tender.

    • The recipe says > 5 hours which is "greater than" five hours, always cook for the length of time stated in the directions. I'm guessing you might have a newer crockpot? Newer models of a certain popular brand cooks WAY too hot to use most recipes in. It's a shame that they keep selling them since they basically will ruin whatever you put in it.

    The wife and I thoroughly enjoyed this. I used boneless pork loin instead of tenderloin, cheaper and just as tender in this kind of recipe. We both agreed that I need to make no adjustments to the recipe when I make it again, ingredients were just right. Do not use less crushed red pepper than called for. It is essential.
