Asian Pork With Vegetables And Brown Rice

ingredients
3 tablespoons soy sauce
1/4 teaspoon lime peel, grated
2 tablespoons fresh lime juice, divided
1 tablespoon chopped fresh ginger
1 tablespoon garlic, chopped
1 pound pork tenderloin, cut into strips
1 teaspoon vegetable oil
1 cup fat-free chicken broth
1/2 pound shiitake mushrooms, sliced
3 medium carrots, sliced diagonally
1 teaspoon jalapeno, chopped
4 ounces snow peas, trimmed
1 teaspoon cornstarch, stirred into
1 tablespoon water
1/4 cup fresh basil, thinly sliced
2 cups cooked brown rice
directions
Combine soy sauce, lime peel, half the lime juice, the ginger and garlic in a dish. Toss in pork; let stand 15 minutes.
Heat oil in 12-inch nonstick skillet over medium-high heat. Add half the pork with slotted spoon and cook, turning once, 4 to 5 minutes, until browned. Remove and keep warm.
Repeat process with remaining pork, reserving marinade. Add reserved marinade, broth, mushrooms, carrots and jalapeno to skillet. Bring to boil; cover and cook 5 minutes.
Stir in peas; cover and cook 2 minutes. Stir in cornstarch mixture; boil 1 minute. Add basil; return pork and cook until heated through. Serve with rice.

A lot more prepping than I usually do. It seemed a bit bland to me.
Did you substitute any ingredients? Because fresh lime, ginger, jalapeno, garlic, and basil add tons of flavor to this dish. And since you mention that it's more prep work than you usually do I wonder if you substituted something...?

Really liked this recipe because of all the fresh flavors. Good balance of veggies too. The whole thing is very easy to make and with the brown rice, fat-free broth, and low use of oil it is a healthy dinner as well. Will make this again I'm sure. I wouldn't change a thing.

This dish was easy & delicious! I only switched the veggies mushroom & snow peas, to yellow squash & broccoli, that were available in my garden, but with everything else the same. It has good flavor & the various textures keep it interesting from start to finish. Hubby loved it too, but our young kids may take a few tries til they get used to the asian flavor. Will definitely do again!
