ingredients
1/3 cup butter
1 1/2 cup sugar
3 eggs
2 tablespoons flour
2 tablespoons cornmeal
1 1/4 cup drained, canned, crushed pineapple
1 1/4 cup coconut
1 teaspoon vanilla extract
1 unbaked 9-inch pie shell
directions
Heat oven to 350 degrees F.
In medium bowl, beat together butter, sugar, eggs, flour, and cornmeal until well blended. Add pineapple, coconut, and vanilla. Mix well. Pour into pie shell.
Bake 45 minutes or until wooden pick inserted in center comes out almost clean.
