1 egg
1 1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vegetable oil
1/2 cup cornstarch
1/4 cup all-purpose flour
2 pounds boneless, skinless chicken, cut in bite-sized pieces
cooking oil, as needed
Orange Glaze
1 teaspoon minced garlic
1 1/2 teaspoon grated orange rind
1 cup orange juice
1/2 cup hoisin sauce
1 dash cayenne pepper
1/4 cup sugar
salt and pepper to taste
In a large bowl, whisk together the egg, salt, pepper, vegetable oil, cornstarch, and flour. Stir in the chicken, mixing well to coat it in the coating mixture.
Heat 1/2-inch of cooking oil to 375 degrees F in a wok or deep skillet over high heat.
Add the coated chicken to the oil in small batches. Stirring constantly, cook for 4 minutes or until just golden brown and crispy. Remove with a slotted spoon and drain on paper toweling. Repeat with the remaining chicken.
Drain off all the oil except 2 tablespoons and return the wok to medium heat. Add the garlic and cook, stirring constantly, for 30 seconds.
Add the orange rind, orange juice, hoisin sauce, cayenne, and sugar. Bring the liquid to a boil, stirring constantly, and cook for 2-3 minutes.
Reduce the heat to a simmer and let cook, stirring frequently, until the sauce thickens.
Toss the chicken with the sauce and serve with steamed white rice and stir-fried vegetables, if desired.

This is wonderful, but after tasking the sauce, I added a pinch of powdered ginger. After the pinch, it tasted exactly like Applebees. Also, if you double or triple the sauce, one can freeze it. It doesn't freeze solid, so one can take out whatever amount wanted. BTW, I have some in the freezer,(now 7 months) and it's still great.
Referring to your Copycat Applebee's Crispy Orange Chicken Skillet, sounds divine but as husband is diabetic and won't use substitute sugar, any suggestions re the 1/4 cup sugar or would it be okay to just leave this out completely?
You could leave it out - it will be a bit more tart without it

This was amazing. I doubled the sauce. Came together so easy. Had everything ready and made for company. It is now on my monthly roation
