These fajitas are totally fool-proof! Grilled or baked chicken breast with peppers and onions, sour cream and salsa is a quick and easy weeknight option that leaves everyone happy.

5 ounces chicken breast, marinated in fajita seasoning
1/2 tomato, diced
4 ounces onion, sliced
2 ounces bell peppers, sliced
1/4 cup sour cream
1/4 cup pico de gallo or salsa
1/2 cup shredded Cheddar cheese
4 flour tortillas
Fresh jalapenos, sliced
Place marinated chicken on clean lightly oiled grill. Cook chicken until it reaches minimum temperature of 165 degrees F.
Slice chicken into thin pieces. Saute tomato, onion and peppers. Place tortillas in the microwave for 14 seconds.
Serve with pico de gallo or salsa, sour cream, Cheddar cheese and fresh jalapenos.

I guess this is OK as far as it goes, but that's only halfway. I've always thought fajita ingredients were mostly optional, it's the marinade ingredients that's more important.

I didn't even attempt to slice the chicken into 40 pieces. Seriously? I just sliced it thin and made fajitas with it like I normally do.
