Tonkatsu Sauce

ingredients
1 cup chili sauce
1/2 cup fish sauce or Worstershire sauce
1/2 cup sake
3 tablespoons ginger
2 tablespoons minced garlic
1/4 cup sugar
1/4 cup mirin
directions
Put all above ingredients in sauce pan and bring to a boil over medium heat stirring occasionally. Reduce to a simmer for 25-30 minutes skimming any foam that rises to the top.
Will keep refrigerated for 4 weeks. Use this for pork chops or pork cutlets the most.

I just made this. I halved the chili sauce but it was still astoundingly spicy. Also the worcestershire sauce is the main flavor of this. The recipe does not say to strain the mix but I did as the lumps were unattractive and would make for an unpleasant mouth feel. It's not a bad-tasting sauce but it's not like the tonkatsu sauce I've had in the past.
