The amounts will depend on your need and taste. Slowly heat the oil with the minced garlic, keeping the temperature on low so that the garlic does not brown. The longer the garlic sits in the oil the stronger it gets. Strain the oil. Keep extra oil refrigerated.
Note: do not let this sit at room temperature for long as garlic can go rancid and bacteria can form.
