1 pound butter, softened but not too warm
2 cups freshly grated Parmesan cheese
16 slices Italian bread, 1/4-inch thick

directions

Combine the butter and Parmesan cheese in a mixing bowl and beat on medium speed with an electric mixer until well blended.

Heat a griddle or large skillet over medium-high heat.

Spread the cheese mixture on bread slices. Place the bread cheese-side down on the griddle. Cook until the cheese has lightly browned. Serve immediately.
