Garlic bread is already a winner. Cheesy garlic bread takes it to another level! Ooey gooey mozzarella melts on top of Italian bread spread with garlic, butter, and parsley. This recipe serves 50 soon-to-be very happy people, but it can easily be scaled down for any occasion!

3 cups grated Parmesan cheese
1/3 cup dried oregano
1/3 cup dried parsley flakes
1 cup butter or margarine, softened
3 cloves garlic, minced
1 cup vegetable oil
6 loaves French bread, cut into 1/2-inch slices
6 pounds Mozzarella cheese, shredded
Preheat the oven to 400 degrees F.
Combine the Parmesan, oregano, and parsley in a bowl. Mix well.
In a mixing bowl, combine the butter and garlic. Beat with an electric mixer until the butter is fluffy. With the mixer running, slowly add the oil. Mix well, scraping down the sides of the bowl as needed.
Spread the butter mixture over one side of each bread slice. Place the bread, buttered side up, on baking sheets.
Top each slice with 1/4 cup of the Mozzarella cheese. Sprinkle each with the Parmesan mixture.
Place the baking sheets in the oven and bake at 400 degrees F for 10-12 minutes or until the cheese is melted and lightly browned.
Serve warm.
