2 onions, chopped
2 jalapeno peppers, seeded and finely chopped
4 cans (15 ounce size) black beans, rinsed and drained
1 can (28 ounce size) diced tomatoes, undrained
1/3 cup honey
1/3 cup packed light brown sugar
1 teaspoon ground ginger
1 teaspoon salt
In a large soup pot, heat the oil over medium heat. Add the onions and jalapeno peppers, then saute for 3 to 4 minutes, or until tender.
Add the remaining ingredients and mix well. Continue cooking over medium heat for 25 to 30 minutes, or until thickened, stirring occasionally.

The sweetness balances the heat perfectly. If you want more heat, leave the ribs/seeds from the jalapenos in. A great side dish! Would go with a variety of entrees.
