Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
Exotic Lamb Stew

ingredients
Main Dish
3 cloves garlic, peeled smashed then chopped
1 cinnamon stick
1 tablespoon cumin
1 tablespoon "hot" paprika
2 pounds lamb, cut into 1-inch cubes (use leg or neck meat, but whatever cut you use make sure it's full of fat and connective tissue)
sea salt
freshly ground black pepper
light olive oil, to caramelize the meat
2 small onions, peeled and thinly sliced
1 piece fresh ginger (2" by 1"), peeled and grated
1 tablespoon tomato paste, use Pagani (not the sweet stuff that comes in small cans from your grocer)
1 1/4 cup unsweetened coconut milk
1 cup dry white wine
Sauce
1/4 cup roughly chopped fresh basil
1/4 cup roughly chopped fresh mint
1/4 cup roughly chopped fresh cilantro
1/2 cup roughly chopped unsalted roasted peanuts
3 tablespoons fresh lime juice
2 dashes Tabasco sauce
1 teaspoon brown sugar
cooked Basmati rice, for serving
directions
Finely grind the cumin and cinnamon in a coffee/spice mill.
In a large bowl, combine the garlic, cinnamon, cumin and paprika. Dry pork cubes with paper towels, grind on some pepper, then add the meat to the spice mixture to coat.
In your biggest fry pan (if only 12-inches use two pans or caramelize the meat in two batches), heat 3 tablespoons oil over medium-high heat until hot but not smoking (Burnt oil tastes nasty!). Caramelize the meat well on all sides, for about 10 minutes.
In your heated crock pot or slow cooker, add some oil to barely cover the bottom. Add onions and saute, stirring occasionally, until golden brown, for 10 minutes. Add ginger and saute, stirring, for 2 minutes more.
Put the meat, coconut milk and wine in the crock pot or slow cooker. Bring to simmer, skim any film off surface, and then cover, reduce heat to low and cook gently until meat is very tender, about 1 1/2 to 2 hours.
In a small bowl, combine basil, mint, cilantro, peanuts, lime, Tabasco and brown sugar, and mix well.
Place generous helping of stew in each bowl, top with the garnish and serve with Basmati rice.
