1 can (16 ounce size) sliced peaches
4 boneless, skinless chicken breast halves
1 tablespoon vegetable oil
3 tablespoons Dijon mustard
1 tablespoon honey
1/4 cup sliced green onions
Drain peaches, reserving the liquid.
Heat oil in a large skillet and brown the chicken over high heat.
Blend the reserved peach liquid with the mustard and honey. Pour over the chicken, cover, reduce heat and simmer 10 minutes or until the chicken is cooked through. Remove the chicken to a serving plate.
Add the sliced peaches and green onions to the skillet. Boil over high heat to thicken slightly, about 5 minutes. Spoon over the chicken.
