Ready for a twist on barbecue chicken? Tender bites of chicken are simmered in a sweet, tangy sauce and served over rice or pasta.
4 boneless, skinless chicken breast halves
1 tablespoon oil
1 cup barbecue sauce
1/4 cup spreadable fruit or reduced-sugar jam, apple, grape, or other flavor
Cut the chicken into bite-sized chunks.
Heat the oil in a large skillet over medium-high heat. Add the chicken to the skillet and cook, stirring frequently, until the chicken is no longer pink, about 5 minutes.
Stir in the barbecue sauce and jam. Mix well. Cook, stirring, constantly, until heated through, about 3 minutes.
Serve hot over rice or noodles.
