- #116345
1-2 hrs
ingredients
1 package (16 ounce size) spaghetti pasta, uncooked
2 tablespoons dried oregano
2 tablespoons dried basil
2 teaspoons salt
1 teaspoon pepper
2 lemons, divided
1/4 cup olive oil
5 cloves garlic, pressed
4 pounds roasting chicken
directions
Boil spaghetti for 4-5 minutes, until bendable but not tender. Set aside.
Combine oregano, basil, salt and pepper, olive oil and garlic, then rub over chicken. Pierce one lemon with a fork and place inside chicken cavity, then place chicken in a roaster pan. Squeeze juice of remaining lemon and sprinkle over chicken. Add water to cover bottom of roaster.
Bake at 350 degrees F for 1 1/2 to 2 hours, basting and adding more water as needed, until juices run clear when pierced.
Add spaghetti to roaster and return to oven for an additional 4-5 minutes, until pasta is tender. Slice chicken. Serve with juices over pasta.

They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
