ingredients
2 small lemons sliced
1 bay leaf
2 pounds potatoes, sliced in rounds
2 large onions, sliced in rounds
2 tablespoons chopped tarragon or Italian Seasonings
salt and pepper, to taste
2 tablespoons melted butter or Pam spray butter
1 clove garlic, skinned and peeled
4 chicken parts (whatever suits your fancy)
directions
Soak pot according to directions for using clay pot. Spray pot with Pam, top and bottom. Or spread butter on pot sides to lubricate and stop sticking.
Line bottom and sides of pot with potato rounds, then onion rounds, spray and salt and pepper. Set cloves of garlic around at different levels to season all over. Sprinkle spices around also. Set the chicken quarters on top of this and set slices of lemon around each piece of chicken. Spray on Pam and put a little more salt and pepper on top and cover with clay pot lid.
Place in a cold oven with the temperature set at 425 degrees F. Cook for 40 minutes. Uncover pot and cook for 15 minutes more or until chicken browns. Garnish with the lemon slices and serve with a salad or fancy vegetables.
