ingredients

1 red bell pepper, cut into thin strips
1 yellow bell pepper, cut into thin strips
1 medium onion, cut into thin wedges
1 tablespoon garlic, minced
2 1/2 pounds pork roast, cut into 1 1/2" cubes
2 tablespoons olive oil
1 can (14.5 ounce size) tomatoes (preferably with roasted garlic)
1/2 cup red wine
1 teaspoon fennel seeds
1/2 teaspoon dried orange peel
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon red pepper flakes, crushed
1/4 teaspoon salt
1/8 teaspoon black pepper
3 tablespoons flour
1/4 cup water

directions

Place peppers, onions, and garlic in crock pot. Pat pork dry. Brown in batches in olive oil until browned, stirring occasionally.

Place in crock pot. Add tomatoes and wine to skillet. Bring to a boil over medium heat, deglazing. Pour over contents of crock pot.

Add remaining ingredients, except flour and water, to crock pot. Cook at low heat 7-9 hours or until pork is fork tender.

Whisk together the flour and water. Whisk into liquid in slow cooker. Increase heat to high; cook 15 minutes or until thickened.

Serve with polenta.
