It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


3/4 pound boneless pork loin, cut into 3/4" cubes
3/4 pound boneless beef sirloin, cut into 3/4" cubes
bamboo skewers
1 cup flour
salt and pepper
1 egg, lightly beaten
1 cup milk
2 cups cracker crumbs (or dried bread crumbs)
oil, for frying
Alternate beef and pork cubes on short bamboo skewers. Heat about 1/3 inch of oil in a heavy skillet over medium heat.
Season the flour with salt and pepper. Whisk together the egg and milk. Dip the "chicken" first in the seasoned flour, then the egg/milk mix and finally in the cracker crumbs. Add to the hot oil and cook until browned on all sides. Drain on paper towels.
