Simple Grilled Beef Tenderloin

6 pounds beef tenderloin
kosher salt or sea salt, to taste
cracked black pepper, to taste
directions
Trim excess fat off tenderloin and cover beef heavily with salt and pepper. Build a strong fire on one side of your kettle cooker. Over high heat, sear the tenderloin well on both sides for about 10 minutes.
Move tenderloin to other side of the grill, with no coals underneath it. Place the cover on the grill, and open the top vents about 1 inch to 2 inches.
Cook for about 25 minutes to 30 minutes or until instant-read thermometer reads 120 degrees F for rare, 130 degrees F for medium-rare, 140 degrees F for medium.
Remove meat from heat. Let it rest for at least 15 minutes before slicing.
