Flank Steak With Portobello Mushrooms

ingredients
2 pounds beef flank steak, trimmed
kosher salt to taste
coarsely ground black pepper to taste
6 cloves garlic, minced
1/3 cup extra-virgin olive oil
1/2 teaspoon dried thyme
4 portobello mushrooms, trimmed and sliced
directions
Season steak with salt and pepper. Combine garlic and oil, then rub 1 Tbsp of the mixture over steak. Add thyme to the remaining garlic mixture and rub over mushrooms. Let stand for 1 hour.
Preheat oven to 475 degrees F. Place steak on a rack in a roasting pan and surround with mushrooms. Roast for 12 to 15 minutes, turning steak halfway through, until a meat thermometer inserted horizontally into the thicker end of the steak registers between 125 degrees F and 130 degrees F for rare, or until desired doneness.
Let rest for 5 minutes before slicing against the grain at a slight angle.
