1 1/2 pound frozen cod fillets
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon dried tarragon
1 tablespoon lemon juice
1 1/2 cup mushrooms, chopped
1 1/2 cup carrots, thinly sliced
3/4 cup celery, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon margarine, cut into 6 small pieces
Preheat the oven to 350 degrees F.
Place frozen fish on a sheet of heavy-duty aluminum foil. Season with salt and pepper.
Sprinkle the tarragon and lemon juice on the fish. Add all the chopped vegetables and the fresh parsley. Dot with margarine. Fold and crimp the foil to make a tight package.
Bake for 40 minutes if the fish was frozen, or 35 minutes if it was thawed when it was put in the oven.
To serve, put on individual plates and slit the foil across the top so diners can easily fold it back to enjoy the entree.

We were hesitant to do this, but we used frozen fish as mentioned in the recipe. Mostly we wanted to see if the cooking time would work when cooking from frozen state. And it did! The foil kept the moisture in and basically poached the fish. The flavoring really worked well and the end result was a flaky, flavorful fish! We used baby carrots instead of sliced carrots. The directions are a little vague, but it is implied that each fillet of fish will be in its own foil pouch. Divide the veggies, butter and seasonings among the pouches evenly.
