ingredients

1 tablespoon Old Bay seasoning
1 teaspoon dried cilantro
1 teaspoon dried parsley
1 teaspoon salt
4 cod fillets, thawed
2 tablespoons canola oil
2 tablespoons whole grain mustard
1/4 cup unsalted butter, cut into small pieces
2 tablespoons sweet white wine

directions

Mix the seasonings in a small bowl. Coat both sides of the fish.

Heat half the oil in a skillet over medium-high heat. In two batches, saute fillets until browned, turn fish over and cook another two to three minutes, remove to a plate, cover and keep warm.

Wipe the skillet and add the remaining oil to skillet. Finish cooking the remainder of fish the same way.

When the fish is all cooked, discard the oil in the skillet but do not wipe clean. Add mustard and white wine to skillet. With a wooden spoon, mix well and start to add the butter gradually until the sauce is creamy and slightly thickened.

Serve fish with sauce and smashed Yukon Gold potatoes (if desired).

cook's notes

Cod is a great fish, but you could also use Orange Roughy or MahiMahi. I might even try catfish as well.

    I combined the spices with some flour to make them more of a crust on the fish and give it just a little more crispy texture. Great recipe! I will be making this again because it is so simple. I served it with a quinoa salad and steamed broccoli.
