1-2 hrs
ingredients
4 ounces Neufchatel cheese, softened
1 tablespoon lemon juice
3/4 teaspoon dried dill weed
OR
1 tablespoon chopped fresh dill weed
1/4 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder
1/8 teaspoon hot sauce
6 cod fillets
1/4 teaspoon black pepper
1 egg
1 tablespoon skim milk
1/4 cup seasoned, dry breadcrumbs
non-stick cooking spray
directions
Combine first 6 ingredients in a small bowl and stir until well blended. Shape mixture into a roll, 1 1/2 inches in diameter, then wrap in waxed paper. Freeze for 30 minutes or until set.
Rinse fillets with cold water, and pat dry. Sprinkle fillets with pepper. Cut cheese mixture into equal portions. Place one portion of cheese mixture near narrow end of each fillet. Roll up jellyroll fashion, and secure with a wooden pick.
Combine egg and milk, in a small bowl and beat well. Dip rolls in egg mixture, then dredge in breadcrumbs to coat lightly.
Place rolls, seam side down, in a 12- x 8- x 2-inch baking dish coated with cooking spray. Cover rolls and refrigerate for 1 hour.
Bake at 425 degrees F for 10 minutes or until fillets flake easily when tested with a fork.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
