ingredients
1 pound desalted cod
2 peppers
1 pound ripened tomatoes
8 cloves garlic
1 onion
olive oil
directions
Peel the tomatoes and remove the seeds. Chop all the remaining vegetables into small pieces. Gently fry all of these together with the tomatoes.
Prepare the cod by removing the bones and the skin, crumble the fish and add to the cooked mixture. Let simmer for 30 minutes.
Place the mixture in a serving dish and decorate with slices of peppers.
