Tender breaded fish fillets are the perfect recipient of a flavorful seasoned soy sauce topping.

1/2 cup soy sauce 2 tablespoons stir-fry sauce 3 tablespoons sugar 1/4 teaspoon garlic powder 2 tablespoons minced fresh ginger 2/3 cup water 1/2 cup fish breading or seasoned cracker crumbs 1 1/2 pound small white fish fillets 1/3 cup vegetable oil 2 large green onions, green parts only, chopped
directions
Whisk together the soy sauce, stir fry sauce, sugar, garlic powder, ginger, and water and set aside.
Place the breading mixture in a zip-top plastic bag.
Rinse the fish fillets, shake off excess water but do not dry. Place the wet fillets in the bag with the breading mixture and shake gently to coat the fish in the crumbs. Remove the fish to a dry plate.
Heat the oil in a large skillet over medium-high heat. Add the fillets and cook for one minute or until lightly browned. Gently turn the fish over and brown the other side.
Reduce the heat to medium. Pour the soy sauce mixture over the fillets and let cook for one minute. Carefully turn the fish over again (it will be tender at this point so turn it gently).
Cover the pan and let the liquid simmer for 3-5 minutes or until the fish is completely cooked and flakes easily with touched with a fork.
Remove the fish to a serving platter. Turn the heat to high under the skillet and cook for 1-2 minutes or until the soy sauce mixture reduces a bit. Pour the sauce over the fish. Sprinkle the fish with green onions then serve immediately.
