Italian Baked Haddock

ingredients
1/4 cup butter
1 small onion, chopped
1 green bell pepper, chopped
1/4 teaspoon dried basil, crumbled
1 can (14.5 ounces) tomatoes, drained, chopped
salt and pepper
1 1/2 pound haddock fillets
2 cups grated mozzarella cheese
directions
Heat oven to 350 degrees F. Grease 9-inch glass baking dish.
For Sauce: Melt butter in heavy large saucepan over medium-high heat. Add onion, bell pepper and basil. Saute for 10 minutes, or until vegetables are tender.
Stir in tomatoes. Season with salt and pepper. Cook, stirring constantly, for 5 minutes, or until sauce-like.
For Fish: Arrange fish in prepared dish. Pour sauce over. Sprinkle with mozzarella. Bake for 25 minutes, or until fish is cooked through and top is golden.

We really enjoyed this. I know you shouldn't put something so heavy on top of fish so as to disguise the fish, but with organic tomoatos we really enjoyed the explosion of vegetable flavor of this! i didn't use all 2 cups of cheese to stay healthier and I only added it the last 10 min of baking. You may enjoy adding something spicier to this mix. I, however, just enjoyed a sprinkle of oregano on top.
