2 cups turkey drippings
1/8 teaspoon white pepper
1/4 teaspoon poultry seasoning
1 teaspoon chicken bouillon granules
4 tablespoons unbleached flour
1/2 cup skim milk, at room temperature
Place the turkey drippings in a zip-top bag and place standing up in a large bowl. Let stand for 5 minutes so the fat rises to the top. Drain off as much fat as possible.
Combine the drippings, white pepper, poultry seasoning, and chicken bouillon granules in a saucepan over medium heat. Bring to a simmer and let cook for 5 minutes, stirring frequently.
Whisk together the flour and milk in a bowl until smooth. Add the milk mixture to the saucepan while stirring constantly with a wire whisk.
Cook, stirring constantly, until the gravy is the desired consistency. Serve hot.
