Green tomatoes are for more than just slicing up and frying. This Creole-seasoned gravy is good on everything from pork chops and veggies to a cheesy bowl of grits. Throw in some Tabasco if you want extra heat.

3 tablespoons butter, divided use
1 large onion, chopped
1/4 cup garlic, chopped
2 baseball-size green tomatoes, coarsely chopped
2 cups chicken broth
Creole seasoning, to taste
sugar, to taste
cornstarch
additional chicken broth
Heat a skillet over medium-high heat. Add 1 tablespoon butter and the onion. Cook, stirring frequently, until the onion is soft. Add the garlic and another tablespoon of butter. Cook, stirring, for 1 minute.
Add the tomatoes and remaining butter. Cook, stirring frequently, for 3-4 minutes.
Add the broth, Creole seasoning, and sugar. Cook, stirring, until the tomatoes are very soft.
Mix the cornstarch with enough broth to form a paste. Stir into the tomato gravy. Cook, stirring frequently, for 1-2 minutes or until the gravy thickens.

I had frozen green tomatoes after this summer and used them in this recipe. It was quite good.
