Who said you can't have your chocolate and eat it too? With this low-fat chocolate syrup, you can indulge without worrying about tipping the scales.
1/2 cup firmly packed cocoa powder
1 1/4 cup cold water
1/4 teaspoon salt
1/2 cup sugar substitute
2 1/2 teaspoons pure vanilla extract
1/4 teaspoon chocolate extract
Combine the cocoa powder, cold water, and salt in a saucepan over medium-high heat. Stir until the mixture is combined and comes to a boil. Reduce the heat to a simmer and cook, stirring constantly, for 3 minutes. Remove the pan from the heat and let cool for 10 minutes.
Add the sugar substitute, vanilla extract, and chocolate extract to the cocoa mixture. Mix well then transfer the chocolate syrup to a covered container and store in the refrigerator for up to 1 month.

First time I made this I used a store brand sweetener and it wasn't good. Used a name brand the next time and that made the difference. Had a little trouble finding chocolate extract but finally found a local store that carried it. Also, don't use cheap cocoa powder (I always keep good on hand so that wasn't a problem for me but I could see that majorly changing the flavor).
