Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

This rich and creamy chocolate marshmallow sauce is amazing over a couple of scoops of ice cream. It's equally delicious over cake, brownies, waffles, pancakes, etc.
2 cups sugar
1 cup boiling water
1/4 cup cocoa powder
1 teaspoon vanilla extract
1/2 cup chopped marshmallows (or use miniature marshmallows)
Combine the sugar and water in a heavy saucepan over medium-high heat. Cook, stirring occasionally, until a candy thermometer reaches 220 degrees F. Remove the pan from the heat.
Stir the cocoa powder, vanilla extract, and marshmallows into the sugar mixture and mix until the marshmallows are melted.
Let the chocolate marshmallow sauce cool without stirring until the sauce is just barely warm. Beat the sauce with a mixer until thick.
Serve the chocolate marshmallow sauce warm over ice cream, waffles, pound cake, etc.
