1 1/2 cup honey
1 tablespoon almond extract
1/4 cup brewed strong coffee
1/4 cup oil
2 eggs
2 1/4 cups flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon cinnamon
3/4 teaspoon ground allspice
1/4 teaspoon salt
2 cups peeled, chopped green apples
1/2 cup golden raisins

directions

Preheat oven to 350 degrees F. Grease and flour a 9 inch loaf pan.

Mix honey and almond extract and reserve 1/2 cup and set aside. Sift dry ingredients.

Combine wet ingredients. Make a well in the dry ingredients, add the wet ingredients and stir to mix well. Add apples and raisins and combine.

Place in the prepared pan. Bake about 1 hour or until tested done in center with toothpick. if browning to fast, tent with foil.

Remove from pan and slice when room temperature. Drizzle pieces with the reserved honey and almond mixture.

    The finished loaf was so moist and I loved the sweetness from the honey and almond! I'm not a fan of very sweet breads, so I reduced the honey mixture to 1/2 cup honey + 1/2 tablespoon almond extract and it was still plenty sweet. I did not drizzle any honey mixture on top. I also added a little extra brewed coffee (1/4 cup) to compensate for the lost moisture. This bread stands up very well to a flour mixture of half whole wheat / half white. The final loaf was still very fluffy and moist.

    The pan size was too small, go the next size up. It was a good thing I had lines a pan with foil as it allowed me to make 'extra' sides of about 1/2-3/4 inch or it would have overflowed the pan.

    This was a very nice cake, although I found it to be a little dry. Still went down very well at my work!
