Bread Machine Apple Amaranth Bread

Amaranth flour is made from the amaranth plant, which is a member of the goosefoot family. It has a slightly nutty flavor and is packed with nutrients like fiber, protein, and iron.

ingredients

1 cup apple juice, warmed to 105-110 degrees F
3 tablespoons applesauce, at room temperature
3 tablespoons honey
1 tablespoon almond extract
1/3 teaspoon salt
2 tablespoons vital gluten, optional
3/4 cup amaranth flour
2 1/4 cups whole wheat flour
1 1/2 teaspoon bread machine yeast
1/3 cup chopped toasted almonds

directions

Combine all the ingredients in the bread machine in the order as directed by the machine manufacturer. If your machine has the add-in "beep" option you can add the almonds at that point. Otherwise, add them with the other ingredients.

Select the whole wheat setting if available and light crust color.

Start the bread machine cycle. When the bread is done, remove the pan from the machine and let the bread cool in the pan for 5-10 minutes then remove the bread loaf to a wire rack to cool completely before slicing and storing.

Store the cooled bread in an airtight container.
