Sausage, Home Fries, And Egg Layered Breakfast

ingredients
1 pound jimmy dean sage sausage
1/2 cup green bell peppers
1/2 cup red bell peppers
1/4 cup orange bell peppers
1/4 cup chopped green onions
3 cups square cut home fries (frozen hash browns) thawed
12 large eggs (brown fresh if you can find them)
1 cup buttermilk
1/2 cup milk
1 1/2 cup shredded cheese (monterey jack or pepper jack)
directions
Spray 3 qt. casserole dish with non stick spray.
In frying pan, cook sausage until it crumbles and browns; drain. Add peppers and onions cook and mix until peppers are crispy tender.
In 3 qt. dish spread potatoes evenly. Top with skillet sausage mix. Salt to taste.
In mixing bowl combine eggs and milks. Whisk together and pour over home fries and sausage mix. Top with cheese, cover and bake at 350 degrees F for one hour or until light golden color and eggs have set.
