ingredients


Batter

1/2 pound butter, melted
1/2 cup sugar
2 eggs
1 cup all-purpose flour
1/8 teaspoon salt
1/4 cup milk
1 teaspoon vanilla extract

Filling

2 pounds ricotta cheese
2 eggs
1/4 cup sugar
1/8 teaspoon salt
1 lemon, juiced
8 ounces cream cheese (softened)

directions

Mix batter ingredients by hand and pour half of the batter into 2 greased 9-inch pie pans.

Place all filling ingredients in blender and blend well. Pour filling over batter, spreading, not mixing, over the batter. Spread remaining batter over the filling.

Bake at 300 degrees F for 1 1/2 hours. Let set for a few minutes, then cut into wedges to serve.
