Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I love this recipe. Been making it for years, especially when my children were small on Christmas morning, it baked while we opened gifts. Even though my children are out of the house, I still make it and have plenty of leftovers for dinner!

Very easy to make. I added chopped up grape tomatoes and green onions to give it more flavor. I made it for Christmas breakfast and it was enjoyed by all! Also, it is way more than 4 servings!
