ingredients

1 bag (32 ounce size) frozen southern style hashbrown potatoes
1 pound bacon cut into pieces, fried and drained
1 pound sausage, crumbled, browned and drained
1/2 cup diced onions
1 green bell pepper diced
3/4 pound cheddar cheese diced
12 eggs, beaten
1 cup milk
1/2 teaspoon dry mustard
salt & pepper, as desired

directions

Grease the inside of the crock pot.

Alternate layers of hash browns, bacon, sausage, onion, bell pepper, and cheese.

In a bowl, whisk together the eggs, milk, mustard, salt, and pepper. Pour over the ingredients in the crock pot.

Cover the crock pot and cook on low for 8 hours or until the potatoes are tender and the casserole is heated through.

Serve hot.

    Substitute 1 Tbs Cilantro and about 1/3 small Jalapeno for the green bell. Then just before serving sprinkle top with Seasoned Salt or Barbeque Salt!

    Really good! I made this because my oven wasn't working and we were having guests over for brunch and it was a hit! I read the other reviews and took the recommendation to serve with salsa and sour cream -- delish! Next time I am going to add more cheese and more salt and pepper.

    I made this for Christmas morning and it worked out great. There were only two of us so I cut it in half and substituted mushrooms for the bacon. It still made 7 servings, it took us 3 days to finish. Although we really liked it, it could use more seasoning other than salt and pepper. I will add herbs next time and cayenne pepper.

    I made this for Christmas morning breakfast. It was a big hit! It says it serves 6 but it would serve 9-10 easy, especially if there was fruit or pancakes also served. At the top of the recipe, it says that it is ready in 5 hrs. Within the mixing directions, it says to cook on low for 10-12 hrs. The 5 hrs is the correct time. I did increase the cheese because of the previous reviews. I served it with salsa and sour cream. This recipe will definately be served again.

    We call these eggs slumber party eggs - works well for that, when we go camping, and when I have my grandchildren visiting. As sides, I put out salsa, sourcream, ketchup, biscuits, and cut up fruit. A whole meal with no mess, no fuss - all ready when we wake up. Put the coffe on and enjoy!

    Sounds wonderful, but OMG has anyone figured out the calories and fat on this? Each serving would have more than 5 oz hashbrowns, 1/3 lb meat, 2 eggs, and 2 oz cheese-- that's a whopping breakfast! Think I'll try it, but cut serving size in half and serve with fresh fruit.

    This was easy and delicious! I made it for a teacher breakfast and everyone loved it. I eliminated the salt and used Ore-Ida Country Hash Browns (30-oz bag).

    I prepared this hoping it would taste like breakfast casseroles that you cook in the oven. I wont' make this again. It was edible, but the egg texture was not nearly as good made in the slow cooker as it is baked in the oven.

    I made this for a work brunch, and it was VERY well received! I used a large oval crock pot, and increased the recipe by 25% (around 50% for the cheese). I used Ore-Ida Peppers and Onion Country Inn Hash Browns, but still added the onion called for. I substituted ham for sausage, and kept the meats separated so people had a choice, and I didn't have any mustard. It was done in just 8 hours, and was great when served an hour and a half later. I will definitely consider this for the next family breakfast gathering!

    I made this over the weekend when I had friends from college down. It was a great way to serve breakfast in the morning without having to get up early to cook. I added more cheese than the recipe states and it still wasn't that cheesy. It's a definite Christmas morning breakfast!
