It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I could not find my recipe for an egg souffle. I wanted to prepare on New Year's Eve for New Year's Day. This worked quite well. I changed it slightly, using only 5 slices of bacon and 1 1/2 cups of Cheddar Cheese. I put the cubes in the dish and layered the cheese and bacon over the bread. Then I poured the egg mixture over it. I put in refrigerator overnight. I placed it in cold oven set for 350 deg. and baked it for 45 minutes. It turned out quite well this morning and we enjoyed it. Happy New Year!
