For Candied Peel: Peel oranges with a potato peeler to keep free of the bitter white pith. Cut peels into matchstick like pieces. Cover the peel with water in a pan and boil for 10-15 minutes.
Drain water from peel, add sugar and simmer for 15 to 20 minutes, stirring occasionally.
For Bread: Sift all dry ingredients together. Add 1 cup candied orange peel. Add milk and egg and stir well.
Place in a greased 4 1/2" x 8 1/2" loaf pan. Sprinkle lightly with sugar. Let stand for 10 to 20 minutes. Then, bake at 350 degrees for about 1 hour.

The candied orange peel is bitter, no matter how much sugar is in it. But I am giving it another go by soaking the orange peel in the sugar that has melted down, over night. I'll let everyone know how it is.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!
It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Sounds like you might have had some of the pith (white part of the peel) in there if it was bitter.
