3 ripe bananas, mashed
1 1/8 cup sugar
1/2 cup orange juice
2 eggs
1/4 cup softened butter
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup chocolate chips
1 cup walnuts, chopped, optional

directions

Beat bananas, sugar, orange juice, eggs, butter and vanilla.

Add flour, baking powder, baking soda and salt. Mix well. Stir in chocolate chips.

Pour into 2 greased loaf pans. Bake at 350 degrees F for 45-55 minutes.

    I had bought a bunch of bananas to have on hand. Husband went to the store and bought more bananas. Ended up with way too many bananas so it was time to make some bread! I've mad this recipe three times now and it is delicious. Good banana flavor and the bread isn't crumbly or dry or anything. I omit the nuts because my son won't eat them.

    So easy to make. I made a batch for a 4 loaf recipe and used two 8 inch loaf pans and 3 tiny crock loafs and they all cooked perfectly together for 45 minutes. One was plane and the others with Chocolate chips. DELICIOUS!

    This is a tasty recipe. One note though, make sure you bake in two 8 inch loaf pans or in one 9 inch loaf. There was not enough batter for my two 9 inch loaf pans. They turned out fine but were very flat. Maybe it's a given to use 8 inch but as I'm a pretty good baker I'm not a professional baker, you have to tell me these things. You can also use one 9 inch square pan if you don't want the loaf look. I didn't add the walnuts as dh doesn't like them, you only need 1/2 cup to 3/4 cup chocolate chips and although I liked the idea of adding orange juice to the recipe I could not taste it. Maybe the choc. chips overwelmed the orange taste. I would definitely make this again. Thanks!
