ingredients
1 pint sour cream
1/2 cup butter, melted, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 tablespoon butter, softened
3 ounces cream cheese, softened
3 large eggs
2 teaspoons sugar
1 teaspoon freshly squeezed lemon juice
1 package (16 ounce size) broad egg noodles
1/3 cup white raisins, optional
directions
In a medium bowl, combine the sour cream, melted butter, cream cheese, eggs, sugar and lemon juice. Whisk lightly with a fork. Cover and refrigerate overnight if possible.
Cook noodles in a large pot of salted boiling water until al dente, or a little chewy (add a little oil to the water if you like). Drain and toss with 1 tbsp softened butter. Cover and refrigerate overnight if desired.
Preheat the oven to 350 degrees F. Generously butter the cups of a 12 cup popover pan; set aside.
Fold the noodles into the cold egg mixture and combine well. Fold in the raisins, if using.
Fill the popover cups two thirds full with the noodle mixture. Bake until golden brown, about 45 minutes. Serve the popovers hot.
