Cheddar Whole Wheat Popovers

ingredients
1 egg, beaten
1 egg white, lightly beaten
1/4 cup whole wheat flour, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons whole wheat flour
2 tablespoons all-purpose flour
1/2 cup skim milk
1 tablespoon margarine, melted
1/8 teaspoon salt
non-stick cooking spray
2 tablespoons shredded extra-sharp Cheddar cheese
directions
Combine first 7 ingredients in a medium bowl; beat with an electric mixer just until smooth.
Place a muffin pan coated with cooking spray in oven at 450 for 2 minutes or until a drop of water sizzles when dropped in pan. Remove pan from oven; pour 1 tablespoon batter into each cup. Sprinkle each with 1 teaspoon cheese; fill cups three-fourths full with remaining batter.
Bake at 450 degrees F for 20 minutes. Remove from oven, and prick each popover with tines of a fork. Bake an additional 5 minutes. Remove from muffin pans, and serve immediately.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

I've made popovers before, but this recipe does not make enough batter for 6 popover cups. It didn't pop, but created 6 tiny "muffins".
The recipe says to use a "muffin pan", not popover cups. I think the idea is that they are more like muffins.
