Cranberry Banana Loaf

ingredients

1/4 cup butter or margarine, melted
1 cup granulated sugar
2 eggs
3 mashed, ripe bananas
1 cup chopped cranberries, fresh or frozen
1 1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon

directions

Combine butter, sugar and 1 egg in mixing bowl. Beat until smooth. Beat in second egg. Stir in banana and cranberries. In separate bowl, combine flour, baking powder, soda, salt and cinnamon. Stir well. Add all at once to banana mixture. Stir only to moisten.

Scrape into greased 9 x 5 inch loaf pan. Bake in 350 degrees F oven for 1 hour or until it tests done. Let stand 10 minutes. Remove from pan and place on cake rack to cool. Wrap.

    GREAT! I used wheat flour, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 2/3 cup of milk or water. Can you say MOIST.

    Only 4 WeightWatchers points! The slight tartness of the cranberries balances out nicely with the sweetness of the bananas. This is far better than adding chocolate chips to the loaf. I was only trying to use up the last of the wild cranberries I picked last fall and got a nice surprise. If I slice it thinly, I can get 13 stices at 4 WeightWatchers points each. Very reasonable!

    This is wonderful! Everyone we have served it to loves it. The cranberries are sweetened lightly with the bananas. It is not too sweet nor tart. This is a new favorite I will share for years to come. We have already started giving it away as a Christmas treat.
