Slow Cooker Meatballs And Baked Beans

Porcupine-style meatballs (ground beef mixed with rice) are slow cooked in a dressed up baked bean sauce.

ingredients

1 can (3 lb. 5 ounce size) pork and beans
1/4 cup Worcestershire sauce
1/2 cup brown sugar
1/4 cup ketchup
2 teaspoons chili powder
2 pounds ground beef
1 1/2 cup instant rice, uncooked
salt and pepper, to taste
1 green bell pepper, seeded and sliced
1 medium onion, sliced

directions

Combine the pork and beans, Worcestershire sauce, brown sugar, ketchup, and chili powder in the crock pot and stir to combine.

In a bowl, mix together the ground beef, instant rice, salt, and pepper. Mix well then form into small meatballs.

Heat a skillet over medium heat. Add the meatballs and cook, turning gently, until browned on all sides. Drain off any excess grease and add the meatballs to the crock pot.

Top the meatballs with the onion and green pepper slices. Cover the crock pot and cook on high for 1 hour. Reduce the heat to low and then cook for 2-3 more hours or until the meatballs are cooked through. Serve hot.

    For those that are just lazy,like myself and enjoy the taste of orginal Bushes baked beans. Two cans of those,as a replacement. Makes it just right.

    I recently tried this recipe. I did not make meatballs, I simply browned the ground beef ( used lean sirloin) and added the rice, salt and pepper. This recipe was bland. It seemed like something that would be served at a homeless shelter because it was like a mush, dry and tasteless. Also, for the two of us, the recipe was much too much, I donated the remains to my adult son, who, I think used it as a chili base, added his own fixer upper seasonings. Will let you know if he had better success.

    • Sorry to hear it wasn't to your liking! We actually tried this recipe (for the photo) and found it to be quite flavorful so maybe it depends on the type of pork and beans you use. You also mention that it made too much for two of you - the recipe serves 8 so if you made it as written, it most definitely would be too much! If you scaled it down then perhaps some of the ingredients were too small in quantity to be noticed. I wonder if it turned out dry because the rice was mixed in with everything else? When mixed in with the ground meat for the meatballs it absorbs more fat and juice from the beef, and not liquid from the sauce. Sometimes veering from the original directions doesn't always yield the same results even though we think they might. Would love to hear if you try it again as written and have better results like we did because it was actually quite tasty!

    My meatballs fell apart but tasted great. Needed egg or something to hold them together or less rice.
