Bacon Cheeseburger Meatballs

ingredients
1 1/2 pound ground beef
1 cup oats or bread crumbs
1 egg
1/3 cup ketchup
2 tablespoons mustard
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
4 ounces cheddar cheese, cut into small cubes
1/2 pound bacon, diced, crisped and de-greased
directions
In a large mixing bowl, combine all ingredients except cheese and bacon. Combine with hands.
Using about a golf-ball sized amount of meat mixture, press flat on a plate or counter top. Place one cube of cheese and a bit of the bacon in the center and roll meat into a ball around the cheese and bacon.
Place meatballs on a baking sheet and press any of the leftover bacon into the top of each meatball.
Bake at 350 degrees F for 25-30 minutes, until meat is fully cooked. Serve with your favorite burger toppings for dipping, if desired.

How fun! A really tasty treat. Perfect as a meal, a snack or an appetizer. If you use a lean grind of beef try adding some of the bacon to the meat mixture to provide a little fat (so it doesn't get dry). Make sure to cube the cheese uniformly square (it'll be easier to wrap the meat around it. If the meat is hard to wrap around the filling try chilling it for 15 minutes. Alternately, you can make a golf ball size of meat and then divide into two patties. Place the filling on one patty then top with the remaining patty, pinching the edges to seal.
