Apple Matzo Kugel

ingredients
3 matzos
6 eggs
1/2 cup sugar
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup raisins
1/2 cup chopped nuts
4 apples, shredded
1/3 cup orange juice
cinnamon and sugar
1/4 cup margarine
directions
Break matzo in pieces. Soak in warm water until soft. Drain.
Beat eggs, add sugar, salt, cinnamon. Stir in the matzos. Add raisins, nuts and apples.
Pour into greased 9" x 12" pan. Pour orange juice over top. Sprinkle with cinnamon and sugar mixture. Drizzle with margarine.
Bake at 350 degrees F for 45 minutes or until browned. Let sit for a few minutes before cutting.

I made this recipe for my family for Passover Dinner and they loved it! It was an easy recipe to follow and quick to put together. I shredded the apples in the food processor. I was very pleased with the results.
